Lenten Update

We’ve had some inquiries as to what we are eating for meal during Lent since we have given up meat. I figured I might as well share with all my readers. I will caveat that we were trying to finish up some items so they wouldn’t spoil last week so it wasn’t as meatless as originally planned.

We aren’t particularly heavy meat eaters for breakfast. Just the occasional bacon or sausage. So breakfast is pretty easy. Cereal, bagels, oatmeal, coffee cake, muffins, pancakes, and eggs are all normal fair for us in any given week.

Lunches have tended into a pattern of PB&J, lunch meat sandwiches, deli calzones, and frozen burritos. We won’t be purchasing anymore lunch meat or calzones until after Easter. For burritos, we’re going with bean & chees instead of beef. Matt has requested bean and veggie rice bowls as an additional lunch option during this time. In the past, we have done these with pesto, taco seasonings, or Asian sauces.

When we sat down to commit to this, I spent a rather thorough time planning out meals for the entire period. Planning at that large of scale helps reduce redundancy in the amounts of bean or pasta dishes. We’ve spent the last 7 years dabbling in the meatless meals world so we knew we had plenty of meal options that we liked, but we had never purposefully had so many of them in a row.

These are the meals we have had so far:

  • Lazy Lasagna for 2 (baked pasta dish, no meat in sauce)
  • Black Bean and Sweet Potato Tostadas
  • Spinach Feta Turnovers
  • Tortellini with Tomato Spinach Cream Sauce
  • Sweet Potato and Cilantro Lime Beans
  • Indian Spiced Chickpea Wraps
  • French Bread Margherita Pizza

I’ve given links for the recipes I could find. Some are apparently no longer available online. You are welcome to try out any of these ideas. Also please share ideas of your own. I’ll update in a couple weeks with other things we’ve tried.
